Family and Consumer Science

Adult Responsibilities (4820 S)

Grade 11, 12
1 semester elective

This course focuses on developing the necessary skills to meet the demands of life following high school graduation. The course promotes further development of relationship skills, handling money and credit wisely, managing stress productively, resolving conflict, and making good housing and transportation decisions. Projects related to coordinating dream weddings, designing and furnishing apartments and planning special meals may be included.

Parenthood Education (4900 S)

Grades 10, 11, 12
1 semester elective

Students take a look at the rewards, responsibilities and challenges involved in the parenting role. The importance of the decision to become a parent is reinforced in each unit. Topics covered include human reproduction, pregnancy, childbirth, newborn care, discipline, child development, and providing a nurturing environment for toddlers and preschool children. Field trips, guest speakers and activities with children may be included. All students are required to purchase necessary supplies. Biology I is a prerequisite or should be taken concurrently.

Nutrition and Food (4860 S)

Grades 10, 11, 12
1 semester elective

This elective course includes the study of foods and their nutritional content, menu planning, the use and care of kitchen equipment, sanitation, kitchen safety, and basic food preparation.

Advanced Nutrition and Food (4930 S)

Grades 10, 11, 12
1 semester elective

This course includes diet analysis and special nutrition concerns, as well as cake decorating, garnishing, foreign foods cookery, and yeast breads.

Housing and Interior Design (4880 S)

Grades 10, 11, 12
1 semester elective

Emphasis is placed on housing choices and basic principles of home design and interior decoration. All students are required to purchase necessary supplies for home decorating projects.

ProStart I (5001 A - 5002 B)

Grades 11, 12
1 year elective
Prerequisite: Nutrition and Food and Advanced Nutrition and Food

ProStart is a two-year program developed by the National Restaurant Association. ProStart I is the required course to be taken during the second year of the Culinary Arts Academy. The course focuses on the fundamentals of professional food preparation, customer relations, accounting, cost controls, marketing, sanitation, and careers in the restaurant and hospitality industries. Special events are planned. Some extracurricular service projects are required.

ProStart II (5005 A - 5006 B)

Grade 12
1 year elective - 1 or 2 credits
Prerequisite: ProStart I

ProStart II is a continuation of ProStart I focusing on professional food preparation, customer service, purchasing, management, tourism, and the retail industry. Paid internships outside the regular school day may be scheduled. Some after-school work for some special events will be required. Students who meet all requirements - including successful performance on the exam developed by the National Restaurant Association - will receive a nationally-recognized certificate indicating academic and workplace skill mastery.
